Beets from Jardin des chefs salad accompagnied by pecans caramilized with honey from Les Éboulements and served with cider cream from Verger Pednealt and apple chips

2nd course

Rolled duck from la Ferme Basque served with veal sweetbread and thym aioli with lentil and citrus salad

Cooled grilled shrimps accompanied by a green peas puree, lemongrass oil and black roasted sesame

Or

Citrus and tarragon vichyssoise served with a arugula espuma, lard croustillants and dried tomatoes oil

3nd course

Roasted Atlantic salmon pavé accompanied by a grenobloise dressing with black risotto and St-Fidèle cheese

Grilled Charlevoix veal loin served with organic prosciutto, Dominus beer and rosemary Rösti

Our porc duo (porc medallion en croute with honey and mustard, braised organic porc shoulder parmentier, in a porto reduction)
