“I cook with anything I lay my hands on. I adore vegetables and grains, but it could also be meat or fish. I start with what I find in the fridge. Despite a career in gastronomy, my cuisine remains simple and tasty. Flavours should be frank and true taste emerge,” explains Chef David Forbes.
